Dr. Kit Yam is Professor of the Department of Food Science at Rutgers, The State University of New Jersey. His research has been focusing on developing innovative packaging technologies to improve the safety and quality of foods with the funding support from the industry and from government agencies such as the US Army Natick Soldier Systems Center, USDA, NSF, and NASA. He is editor-in-chief of the Wiley Encyclopedia of Packaging Technology, associate editor of Food Packaging and Shelf Life, author of a textbook in food packaging, author of a book on emerging food packaging technologies, and author of over 100 journal articles and book chapters.
