Dr. Idrees Ahmed is working as Sr. Assistant Professor at University of Kashmir, Hazratbal, Srinagar, India. He did his Ph.D. in Food Technology from Guru Nanak Dev University, Amritsar, India. He has been in teaching and research in Food Science and Technology from nine (09) years. He has so far supervised 25 masters students and is presently supervising 03 doctorate students. His research includes polymer (starch and protein) characterization of cereal, pulses and nonconventional sources; their modification using different, physical, chemical and enzymatic methods. Besides, he has been working on functional food ingredients. He has 52 research publications in peer revewed journals of Elsevier, Wiley-Blackwell, Taylor & Francis, Springer etc. He is member of Association of Food Scientists and Technologists of India, Mysore.
