Talk Title: Better Living through Sensory: How Food Sensory Properties can be used to Influence Dietary Behaviours and Health
Dr. Ciarán Forde is Principal Investigator in Sensory Nutritional Science, at the Clinical Nutrition research Center, A*STAR Singapore Institute for Clinical Sciences and holds a joint appointment with the National University of Singapore as Associate Professor in the Department of Physiology. He joined A*STAR in 2015 to establish the ‘Sensory and Ingestive Behaviour’ team with a focus on how sensory perception influences calorie selection and eating behaviour, and through this impacts energy intake and body composition. The team also research children’s eating behaviours through the Growing up in Singapore to Healthier outcomes (GUSTO) cohort, where they aim to understand how sensory factors influence energy selection and intake within and across meals in the development of dietary behaviour during childhood. Dr. Forde spent >11 years as a research scientist in various food industries in the UK, Australia and most recently as a Senior Research Scientist at the Nestle Research Centre in Lausanne, Switzerland, leading research on sensory and cognitive factors that influence food intake. He holds a BSc. in Food Chemistry and PhD. in Sensory Science from the Department of Nutrition in University College Cork in Ireland.
