Talk Title: Microstructuring unrefined food systems

Prof. Dr. Patrick Rühs is an Assistant Professor (Tenure Track) of Food Structure Engineering at ETH Zürich. He holds an MSc and PhD in Food Science from ETH Zürich and has conducted postdoctoral research in material science at ETH and in bioengineering at UC Berkeley. From 2020 to 2024, he served as Head of Science at Planted Foods, where he developed patented technologies for plant-based meat. Since 2024, his research at ETH focuses on freeze structuring, solid-state fermentation, and extrusion to enhance the nutritional properties of food.
