Marion Dalmasso is an associate professor in food microbiology at Université de Caen Normandie (France), working in the Food Matrices and Microbiota team of the research unit ABTE. She studies interactions between microorganisms within fermented food matrices, particularly in fermented beverages. Her research especially focuses on bacteriophages within food microbial communities. Her work aims to characterize the diversity of phages in these food ecosystems and to understand their roles in the dynamics and structure of microbial populations during fermentation processes.
