Prof. Takahisa Nishizu is the Dean of the Faculty of Applied Biological Sciences at Gifu University, Japan, where he also serves as a Professor in Food Processing and Chemistry and as a University Councilor. Throughout his distinguished academic career, he has held several key leadership roles at Gifu University, including serving as Vice Dean. His professional background includes significant tenures at both Kyoto University and Gifu University, contributing to his extensive experience in research and administration.

His research expertise lies in food engineering and food physical chemistry, with a focus on monitoring and process control in food manufacturing. He is recognized for his fundamental research on food physical properties and the development of innovative evaluation methodologies, including his recent work on mastication processes and sensory evaluation.

Prof. Nishizu’s scientific contributions have been recognized with numerous prestigious honors, including the CIGR Armand Blanc Prize, the Research Award from the Japanese Society for Food Engineering, and the Academic Award from the Japanese Society of Agricultural Machinery and Food Engineers. He has also been honored with the Japan Association of International Commission of Agricultural and Biosystems Engineering (JAICABE) Award and is a Fellow of the JAICABE.

His contributions to academic publishing include his tenure as the Editor-in-Chief of Engineering in Agriculture, Environment and Food and as an editorial board member for Bioscience, Biotechnology, and Biochemistry.
