Fernanda Lüdtk

Fernanda Lüdtke is an Invited Assistant Researcher at the Centre of Biological Engineering, University of Minho. Her research focuses on the development of innovative technologies for the food industry, particularly lipid-based nanostructures and reduced-fat products. Her research interests include lipid science and technology, emulsions, oleogels, nanotechnology, and in vitro digestibility.
