Dr. Beatriz Cabanillas is a tenured scientist and Head of the Allergy Research Group at the Research Institute Hospital 12 de Octubre, Madrid, Spain, and Senior Editor of Food Chemistry. She obtained her PhD in Biological Sciences with an Extraordinary Doctoral Prize from Complutense University of Madrid.

Her research focuses on food allergy with particular emphasis on the molecular characterization of food allergens, the impact of food processing on the allergenicity of foods, epithelial barrier function, and the identification of biomarkers.

Dr. Cabanillas has published 75 peer-reviewed articles as of 2026, 83% of them in D1 or Q1 journals, attracting thousands of citations. She is first, last and/or corresponding author in 75% of her publications. Since 2020, she has led several competitive research projects as Principal Investigator and currently leads a multidisciplinary research team.

She has conducted nine years of research abroad, including seven years at the University of Bonn, Germany, and two years at the U.S. Department of Agriculture in New Orleans, USA, and maintains long-standing international collaborations in food allergy and food science.

Dr. Cabanillas has served on the editorial team of Food Chemistry since 2019 and is currently Senior Editor. She is also Assistant Editor of Allergy and Editor of the Springer Nature book Food Allergens: Methods and Protocols. She has delivered plenary and invited lectures at international conferences and has extensive experience in doctoral supervision, peer review, and international scientific collaboration.
