My name is Jonas Pospiech and I am 29 years old. I studied at the University of Hohenheim, where I obtained my Bachelor and Master of Science degrees in Nutritional Sciences. Currently, I am a PhD student under the supervision of Prof. Jan Frank at the Department of Food Biofunctionality at the University of Hohenheim.
In my research project, I investigate cooking-induced changes in plant-based meat alternatives and the design of cultured meat with respect to the nutrient composition as well as the bioaccessibility of these nutrients.
