Akihito Endo is a professor in the Department of Nutritional Science and Food Safety at Tokyo University of Agriculture and a former board member of the Japan Society for Lactic Acid Bacteria. He discovered fructophilic lactic acid bacteria in fructose-rich niches and has elucidated their unique biochemical and genomic properties through a series of studies. He has published more than 20 research articles on fructophilic lactic acid bacteria. His current research also focuses on the taxonomy and ecology of human gut butyrate producers, Faecalibacterium.
