Karen Chapman-Novakofski, PhD, RD, LDN Editor-in-Chief Professor,

Karen Chapman-Novakofski earned her bachelor's degree from the University of
Illinois at Urbana-Champaign (UIUC), her master's degree from Eastern Illinois University, and her doctorate from UIUC. She completed
her dietetic internship at the University of Alabama in Birmingham, was a dietitian at the VA Medical Center in Danville, Illinois for
11 years, and has been at UIUC in the College of Medicine since 1983 and in the Department of Food Science and Human Nutrition and Division
of Nutritional Sciences since 1991.
Dr. Chapman-Novakofski has over 160 abstracts/proceedings/journal publications, most addressing
some aspect of geriatric nutrition. In addition to healthy aging, her research and publications address changes in taste and physiology;
chronic disease, diet, and aging including diabetes, osteoporosis, and pulmonary disease; and nutrition education strategies for this
age group. She has also authored three education manuals for geriatric nutrition, more than 50 extension and outreach publications, two
continuously used newsletters, and six book chapters.
In 2004, Dr. Chapman-Novakofski was honored with two awards: the Mid-Career
Award in Nutrition Education from the Society for Nutrition Education and the Innovative or Outstanding Team Program Award from Illinois
Extension Service, in recognition of a community-based diabetes education program. In 2006 she received two additional awards: Outstanding
Research Paper Award from the American Dietetic Association Diabetes Care and Education Practice Group and the Distinguished Service
Award from the American Dietetic Association Gerontological Nutritionist Practice Group. In 2007, Dr. Chapman-Novakofski was honored
with two College teaching awards, and in 2008 she recevied the Abbot Award for Women's Health from the American Dietetic Association.
In addition to being a Society for Nutrition Education member, Dr. Chapman-Novakofski is a member of the American Dietetic Association
and the American Society for Nutritional Sciences. Prior to becoming the Editor-in-Chief of Journal of Nutrition Education and Behavior,
she was an Associate Editor, having also served on the Board of Editors for the journal, as well as ad hoc reviewer for the Journal
of the American Dietetic Association, the American Journal of Clinical Nutrition, the Journal of Nutrition, Health,
and Aging, and the Journal of the American College of Nutrition. Dr. Chapman-Novakofski also has had experience as the
features editor for the American Dietetic Association's Gerontological Nutritionists' Newsletter.
Karen is married to Jan
Novakofski, a professor of Animal Sciences at UIUC, and has two children. They enjoy cooking and gardening, and visiting art museums
and zoos. Karen also enjoys traveling, especially if she has the opportunity to fish, snorkel, or ski.

Susan Johnson earned her bachelor's degree in Biology from the University
of North Carolina at Chapel Hill, her master's degree in Nutrition Science from The Pennsylvania State University and her doctorate in
Nutrition Science from The University of Illinois at Urbana-Champaign. She has worked in a variety of settings including virology, pharmacology
and molecular biology laboratories. In 1994, she became a postdoctoral fellow at the Center for Human Nutrition at the University of
Colorado Denver. In 1996 she joined the faculty of the Department of Pediatrics at UC Denver.
Dr. Johnson's primary focus is research
related to factors that influence the development of children's food intake and eating patterns. She conducts research at The Children's
Eating Laboratory, which investigates the effects of child-feeding practices on children's food preferences, energy intake patterns,
and their weight outcome. As a member of the Colorado Nutrition Network, she assisted in the development of innovative preschool nutrition
education materials that are experiential and developmentally appropriate. She also is a founding member of the About Feeding Children
group—a multi-state consortium of nutrition, human development and child-care professionals. The mission of this group is to identify
opportunities for enhancing the mealtime curriculum and environment in child care. She has recently become active in the area of nutrition
status of individuals with intellectual disabilities.
Dr. Johnson has been awarded the UCHSC Graduate School Dean's Mentoring Award
(2007), the Ruth Bowling Award for Excellence in Nutrition Education (2001) and the University of Idaho Margaret Richie Distinguished
Speaker Award (2001). In 2004 she was elected to Who's Who in Medical Sciences Education
In addition to being an Associate Editor
for the Journal of Nutrition Education and Behavior, Dr. Johnson was a member of its Board of Editors and an ad hoc reviewer. In addition,
she is currently an ad hoc reviewer for the Journal of Pediatric Psychology, The Journal of the American Medical Association, The
Journal of Clinical Nutrition, The Journal of Pediatrics, Appetite, British Journal of Nutrition, Obesity Research, and Pediatrics.
Susan lives in Boulder, CO and enjoys music and dance and, of course, camping and hiking in the Rocky Mountains.

Mary Murimi earned her bachelor's degree from Mundelein College in Chicago, her
master's degree from Eastern Illinois University, and her doctorate from Iowa State University. She worked as a consultant for long-term
facilities and as a WIC dietitian for two years before joining Louisiana Tech University's College of Applied and Natural Sciences.
Dr. Murimi is an Associate Professor of Nutrition and a tenured faculty member in the School of Human Ecology. She has over 50 abstracts/proceedings/journal
publications. Her research projects address aspects of obesity and related chronic diseases in both school and community settings.
In
2006, Dr. Murimi was honored with two awards: the College of Applied and Natural Sciences Scholarly Activity Award and the Friend of
Dubach High School Award for Contributions to Health and Education.
In addition to being a Society for Nutrition Education member,
Dr. Murimi is a member of the American Dietetic Association and a member of the Community-Campus Partnership organization.
Prior
to becoming an Associate Editor for the Journal of Nutrition Education and Behavior, Dr. Murimi served on the Journal's Board
of Editors, and as an ad hoc reviewer for the Journal of the American Dietetic Association, the Journal of School Health,
and Appetite.
Mary is married to Sammy Murimi, a founder and director of Share International, a Christian mission agency. Sammy
and Mary have four children. Being a "soccer mom" and hiking Louisiana's parks are her weekend activities.

Judy Sheeshka completed her undergraduate education at the University
of British Columbia, Canada, a dietetic internship at the Ottawa Civic Hospital, and her graduate work at the University of Guelph, where
she's been a faculty member since 1991. She teaches undergraduate courses in introductory nutrition, food security, and nutrition education,
and a graduate course in community nutrition. The focus of her research is nutrition policy, and recent studies have included food security
monitoring, consumer use and understanding of Canada's Food Guide, food advertising to children, and the effect of nutrition
information on consumer choices in fast food restaurants.
For the past 10 years, Dr. Sheeshka has also published in the area of
the potential chemical risks and health benefits of consuming fish. She is currently appointed to the International Joint Commission
of the Great Lakes, Science Advisory Board's Health Professionals Task Force.
Before becoming an Associate Editor of the Journal
of Nutrition Education and Behavior, Dr. Sheeshka was a member of the Editorial Board and a long-time reviewer. She also served
as an Associate Editor-in-Chief of the American Journal of Health Promotion for four years.
Judy lives in Guelph, in southern
Ontario. She is active in dog therapy, visiting retirement and nursing homes with her Shelties.

Kristin Faust received her bachelor's degree in Food Science & Human Nutrition with an emphasis in Dietetics from the University of Illinois at Urbana-Champaign (UIUC). She went on to complete
her dietetic internship at the James A. Haley Veterans' Hospital in Tampa, Florida. She came back to her alma mater to get her master's
in Nutritional Sciences where she examined specialized nutrition formula?s role in children with compromised gastrointestinal health.
In addition to being the Managing Editor for the Journal of Nutrition Education and Behavior, Kristin has two additional
positions. She combines work at Illinois Nutrition Education and Training Program (NET) and as an Assistant Dietetic Didactic Program
Director at UIUC. Through her role at NET, she enjoys providing presentations to child care facilities and schools about development
of healthy, active curriculum and marketing nutritious school meals. As an Assistant Program Director, she helps assess student learning
outcomes for accreditation standards, advising students, and developing program & website content.
When she is not at work,
Kristin enjoys family, reading, yoga, and gardening.

the Editorial Assistant for New Resources, Stacey has two additional positions. Stacey is a Research Dietitian for the National
Soybean Research Laboratory at the University of Illinois at Urbana-Champaign, as well as a Community Culinary Nutrition Instructor
for the University?s Campus Recreation's healthy cooking classes. Stacey completed her dietetic internship and earned her Master of
Science degree in Public Health Nutrition from the University of Tennessee at Knoxville. Her professional career has concentrated in
the area of community nutrition program development, implementation and evaluation, with a primary focus in child health and education.
All of this, however, is put into perspective by her job #1 as mom to two very active boys.
