International Journal of Food Microbiology publishes
contributions dealing with all aspects of food microbiology. Papers submitted
for publication must be novel and of high scientific quality and impact. International Journal of Food Microbiology does not
publish preliminary or confirmatory results. Full-length original research papers, short communications, review articles and book reviews
in the fields of bacteriology, immunology, mycology, parasitology, virology, food safety and food fermentation are welcomed. Emphasis
will be placed on papers dealing with microbiological quality assurance, intrinsic and extrinsic parameters of foods affecting microbial
survival and growth, microbial ecology of foods, microorganisms involved in food fermentations, including probiotics and starter cultures,
methods for microbiological and immunological examinations of foods, as well as rapid, automated and molecular methods, indices of the
sanitary quality of foods, incidence and types of food microorganisms, food spoilage, microbiological aspects of food preservation and
novel preservation techniques, microbial interaction, predictive microbiology, food-borne diseases of microbial origin and the safety
of novel food products. This journal also publishes special issues of selected, peer-reviewed papers from suitable meetings, workshops,
conferences, etc, in the field of food microbiology.
