The G.F. S. Paper Competition Committee has identified
the three winners of the George F. Stewart IFT
International Research Paper Competition. All
five finalists were recognized at the International

Diversity is everywhere in the world of food.
Consumers differ in their sensory sensitivity,
in their liking for and their expectations of
food and even the same person will have different
food preferences and expectations in different
situations. Food habits are very diverse, especially
in Europe with its many different cultural traditions.
Notwithstanding all this diversity, our research
methods are often still directed at making global
food products for average consumers. It is time
to take diversity seriously both scientifically
and as an approach to consumers; this is precisely
what this conference intends to do and the organisers
invite you to present and discuss data and methods
that highlight aspects of diversity. Selected
papers from this conference will be published
in a special issue of Food Quality and Preference.

NIZO Dairy Conference: Prospects for Flavour Formation
and Perception

ingredients, from flavour generation, processing,
via release under oral conditions, to perception.
It will particularly focus on developments that
affect consumer (quality) perception of (processed)

experts from the fields of flavour, microbiology,
biochemistry, processing and sensory science to
identify new ideas and routes that boost product
development with improved consumer-preference
and -acceptance and sustain innovations in dairy.
